Ingredients

  • 3 tablespoons olive oil

  • 4 minced garlic cloves

  • 2 teaspoons finely chopped fresh rosemary (or 1 teaspoon dried)

  • 1 teaspoon finely chopped fresh thyme (or ½ teaspoon dried)

  • 1 teaspoon paprika

  • 1 teaspoon onion powder

  • 1 teaspoon salt

  • ½ teaspoon freshly ground black pepper

  • 1 cup beef broth or stock

  • ½ cup dry red wine (optional)

Preparation

  • Step 1. Preheat the Oven: Set your oven to 300°F (150°C).


  • Step 2. Prepare the Ribs: Dry the beef ribs with paper towels. Remove the silver skin from the back if it hasn't been done.


  • Step 3. Make the Herb and Garlic Rub: Combine olive oil, minced garlic, rosemary, thyme, paprika, onion powder, salt, and pepper in a small bowl.


  • Step 4. Season the Ribs: Apply the herb and garlic mixture all over the ribs, ensuring a thorough coating.


  • Step 5. Prepare the Baking Dish: Arrange the ribs in a large roasting pan or baking dish, bone-side down. Pour beef broth and red wine (if used) around the ribs, not over them. Cover the pan tightly with aluminum foil to retain moisture.


  • Step 6. Roast the Ribs: Place the pan in the oven and roast for 2.5 to 3 hours, or until the ribs are tender and the meat easily separates from the bone.


  • Step 7. Broil for a Crispy Finish (Optional): Remove the foil and raise the oven temperature to 450°F (230°C) or switch to broil. Broil the ribs for 5-10 minutes to crisp the surface, monitoring closely to avoid burning.


  • Step 8. Serve: Move the ribs to a serving platter, drizzle some pan juices over them, and garnish with fresh rosemary or thyme if desired.
