Ingredients
• 4 chicken breasts, boneless and skinless
• 1 teaspoon smoked paprika
• 1 teaspoon garlic powder
• 1/2 teaspoon dried oregano
• Salt and pepper, to taste 2. Vegetables:
• 1 medium zucchini, sliced
• 1 medium yellow squash, sliced
• 1 red bell pepper, chopped
• 1 red onion, sliced
• 1 cup cherry tomatoes
• 3 cloves garlic, minced
• 2 tablespoons olive oil
• Juice from 1 lemon
• 1/4 cup feta cheese, crumbled
• 2 tablespoons fresh parsley, chopped
Preparation
Step 1. Season the Chicken:
• Dry the chicken breasts with a paper towel.
• Season both sides with smoked paprika, garlic powder, oregano, salt, and pepper.
Step 2. Cook the Chicken:
• Warm 1 tablespoon of olive oil in a large skillet over medium-high heat.
• Cook the chicken breasts for 5–6 minutes on each side until they are golden brown and fully cooked (internal temperature of 165°F). Take them out of the skillet and set aside.
Step 3. Cook the Vegetables:
• Using the same skillet, heat the remaining tablespoon of olive oil.
• Add zucchini, yellow squash, red bell pepper, red onion, and minced garlic. Sauté for 5–7 minutes until the vegetables are tender yet crisp.
• Include cherry tomatoes and cook for another 2 minutes until they begin to soften.
Step 4. Combine and Finish:
• Place the chicken breasts back into the skillet, nestling them among the vegetables.
• Drizzle fresh lemon juice over the dish and sprinkle with crumbled feta cheese.
Step 5. Serve:
• Garnish with fresh parsley and serve hot. This dish goes well with whole-grain bread, rice, or quinoa for a complete meal.
